Delicious Spicy Creamy Garlic Parmesan Chicken Fillets

- 4 Boneless, skinless chicken fillets (approx. 1.5 lbs / 680 g), pounded to ½-inch thickness
- 1 tsp Sea salt
- ½ tsp Black pepper
- 1 tsp Smoked paprika
- ½ tsp Garlic powder
- ½ tsp Onion powder
- ¼ tsp Cayenne pepper
- ½ tsp Dried oregano
- 2 tbsp Olive oil
- 2 tbsp Unsalted butter
- 4 cloves Garlic, minced
- 1 ½ cups Chicken broth
- 1 cup (240 ml) Heavy cream
- 1 cup Freshly grated Parmesan cheese
- ¼ cup Sun-dried tomatoes, oil-packed, drained and thinly sliced (optional)
- 2 cups Fresh spinach (optional)
- 1 tsp Red pepper flakes (adjust to taste)
- 1 tbsp Fresh lemon juice
- ¼ cup Fresh parsley, chopped
Instructions
- Prepare Chicken: Pound chicken fillets to an even ½-inch thickness. Pat thoroughly dry. In a small bowl, combine salt, pepper, smoked paprika, garlic powder, onion powder, cayenne pepper, and dried oregano. Season both sides of each chicken fillet generously.
- Sear Chicken: Heat a large skillet over medium-high heat. Add olive oil and 1 tablespoon of unsalted butter. Once hot, sear chicken fillets for 4-6 minutes per side, until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken to a plate and cover loosely with foil.
- Build Sauce Base: Reduce heat to medium. Add the remaining 1 tablespoon of unsalted butter to the same skillet. Sauté minced garlic for 1 minute until fragrant. Pour in chicken broth, scraping up any browned bits from the pan. Simmer for 2-3 minutes to reduce slightly.
- Create Creamy Parmesan Sauce: Reduce heat to low. Stir in heavy cream and bring to a gentle simmer. Slowly add Parmesan cheese, stirring continuously until melted and smooth.
- Add Spice and Optional Ingredients: Stir in red pepper flakes (adjust to your desired spice level). If using, add thinly sliced sun-dried tomatoes and fresh spinach, stirring until the spinach wilts. Taste the sauce and adjust seasonings as needed. Stir in fresh lemon juice for brightness.
- Finish and Serve: Return the seared chicken fillets to the skillet, nestling them into the sauce. Spoon some sauce over the chicken and simmer for 2-3 minutes to warm through. Remove from heat. Garnish generously with fresh parsley and an optional extra sprinkle of Parmesan cheese before serving.
