Spicy Armadillo Eggs: Your New Favorite Game Day Snack

- 1 lb Pork sausage
- 8 oz Cream cheese (softened)
- 1 cup Shredded cheddar cheese
- 1 tsp Garlic powder
- 1 tsp Smoked paprika
- 12 medium Jalapeños (seeded and cored)
- 1 tsp Kosher salt
- 1 tsp Black pepper
- 12 slices Bacon (regular sliced)
- 1 cup BBQ sauce (for drizzling)
Instructions
- Preheat the oven to 400°F. Line a baking pan with parchment paper and set it aside.
- Mix the filling by combining cream cheese, shredded cheddar cheese, garlic powder, and a pinch of smoked paprika in a medium bowl. Stir gently until well blended.
- Core the jalapeños by cutting off the stems and removing seeds and membranes. Fill each pepper with the cheese mixture.
- Knead the sausage and divide into 12 equal portions. Shape a portion of sausage into a flat disc and wrap around the stuffed jalapeño.
- Sprinkle paprika powder over each armadillo egg.
- Wrap two slices of bacon around each armadillo egg, securing with toothpicks if necessary.
- Bake the armadillo eggs on the prepared baking sheet for 25-30 minutes, checking sausage reaches 165°F.
- Glaze with BBQ sauce and return to the oven for an additional 5 minutes.
- Cool for about 10 minutes before slicing.
