Ingredients

  • 1 lb Pork sausage
  • 8 oz Cream cheese (softened)
  • 1 cup Shredded cheddar cheese
  • 1 tsp Garlic powder
  • 1 tsp Smoked paprika
  • 12 medium Jalapeños (seeded and cored)
  • 1 tsp Kosher salt
  • 1 tsp Black pepper
  • 12 slices Bacon (regular sliced)
  • 1 cup BBQ sauce (for drizzling)

Instructions

  1. Preheat the oven to 400°F. Line a baking pan with parchment paper and set it aside.
  2. Mix the filling by combining cream cheese, shredded cheddar cheese, garlic powder, and a pinch of smoked paprika in a medium bowl. Stir gently until well blended.
  3. Core the jalapeños by cutting off the stems and removing seeds and membranes. Fill each pepper with the cheese mixture.
  4. Knead the sausage and divide into 12 equal portions. Shape a portion of sausage into a flat disc and wrap around the stuffed jalapeño.
  5. Sprinkle paprika powder over each armadillo egg.
  6. Wrap two slices of bacon around each armadillo egg, securing with toothpicks if necessary.
  7. Bake the armadillo eggs on the prepared baking sheet for 25-30 minutes, checking sausage reaches 165°F.
  8. Glaze with BBQ sauce and return to the oven for an additional 5 minutes.
  9. Cool for about 10 minutes before slicing.
