  • 2 tablespoons Olive Oil
  • 2 teaspoons Ground Spices (cumin, smoked paprika)
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 4 cloves Garlic
  • 1 cup Tomato Sauce (passata)
  • 1 cup Chicken Stock
  • 1/2 cup Currants
  • 2 tablespoons Lime Juice

Instructions

  1. Start by generously rubbing the scotch fillet with olive oil, cumin, smoked paprika, salt, and pepper.
  2. In a heavy non-stick frying pan over medium heat, brown the pork on all sides until it’s golden brown.
  3. In the same pan, combine minced garlic, tomato sauce, chicken stock, currants, and lime juice. Bring this mixture to a boil.
  4. Pour the sauce over the browned pork in your slow cooker, making sure to cover it completely.
  5. Set your KitchenAid Slow Cooker to medium heat and let the pork cook for about 7.5 hours.
  6. Once done, allow the pork to rest for about 15 minutes. Then, use two forks to pull the pork into strips.
  7. Drizzle the rich sauce over the shredded pork, and serve it warm with soft tortillas.
