- 2 pounds Pork (scotch fillet)
- 2 tablespoons Olive Oil
- 2 teaspoons Ground Spices (cumin, smoked paprika)
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 4 cloves Garlic
- 1 cup Tomato Sauce (passata)
- 1 cup Chicken Stock
- 1/2 cup Currants
- 2 tablespoons Lime Juice
Instructions
- Start by generously rubbing the scotch fillet with olive oil, cumin, smoked paprika, salt, and pepper.
- In a heavy non-stick frying pan over medium heat, brown the pork on all sides until it’s golden brown.
- In the same pan, combine minced garlic, tomato sauce, chicken stock, currants, and lime juice. Bring this mixture to a boil.
- Pour the sauce over the browned pork in your slow cooker, making sure to cover it completely.
- Set your KitchenAid Slow Cooker to medium heat and let the pork cook for about 7.5 hours.
- Once done, allow the pork to rest for about 15 minutes. Then, use two forks to pull the pork into strips.
- Drizzle the rich sauce over the shredded pork, and serve it warm with soft tortillas.
