  • 2 tablespoons unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)
  • 1/2 cup semi-sweet chocolate chips (optional)
  • 1/4 cup heavy cream (optional)

Instructions

  1. In a small bowl, mix together the granulated sugar and ground cinnamon. Set aside.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon.
  3. In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; a few lumps are okay.
  5. Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
  6. Pour about 1/4 cup of pancake batter onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
  7. Repeat with the remaining batter, adjusting the heat as necessary.
  8. Once the pancakes are cooked, immediately toss them in the cinnamon-sugar mixture until fully coated.
  9. In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
  10. Remove from heat and pour over the chocolate chips in a bowl. Let it sit for about 5 minutes, then stir until smooth and glossy.
  11. Stack the churro pancakes on a plate and drizzle with the chocolate sauce if using. Serve warm and enjoy your Spanish Churro Pancakes!
