  • 1 tablespoon baking powder
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1/3 cup honey

Instructions

  1. Preheat Oven: Set your oven to 400°F (200°C).
  2. Prepare Batter: In a large bowl, whisk together the cornmeal, flour, baking powder, sugar, and salt. In a separate bowl, mix the milk, eggs, melted butter, and honey. Fold wet ingredients into dry ingredients gently.
  3. Fill Muffin Tin: Grease a mini muffin tin or line with silicone cups and fill each cup about 2/3 full with the batter.
  4. Bake: Bake in the preheated oven for 10-12 minutes until golden brown and a toothpick comes out clean.
