- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1 cup milk
- 2 large eggs
- 1/4 cup melted butter
- 1/3 cup honey
Instructions
- Preheat Oven: Set your oven to 400°F (200°C).
- Prepare Batter: In a large bowl, whisk together the cornmeal, flour, baking powder, sugar, and salt. In a separate bowl, mix the milk, eggs, melted butter, and honey. Fold wet ingredients into dry ingredients gently.
- Fill Muffin Tin: Grease a mini muffin tin or line with silicone cups and fill each cup about 2/3 full with the batter.
- Bake: Bake in the preheated oven for 10-12 minutes until golden brown and a toothpick comes out clean.
- Cool and Serve: Allow to cool for a few minutes before transferring to a wire rack. Drizzle with additional honey butter if desired.
