Ingredients
- Chicken (boneless, skinless breasts or thighs) – 2 large breasts or 4 thighs
- Carrots (diced) – 2 medium carrots
- Celery (diced) – 2 stalks
- Onion (diced) – 1 medium onion
- Garlic (minced) – 3 cloves
- Chicken broth – 4 cups
- Heavy cream – 1 cup
- Flour – 1/4 cup
- Baking powder – 2 teaspoons
- Milk – 1/2 cup
- Butter – 4 tablespoons
- Salt and pepper – to taste
Instructions
- Prepare the chicken by boiling it in water until fully cooked (about 20-30 minutes), then shred the chicken.
- In the same pot, sauté onions, carrots, and celery in butter until softened (about 5-7 minutes). Add garlic and cook for another minute.
- Stir in flour and cook for 1-2 minutes. Add chicken broth, heavy cream, and season with salt and pepper. Bring to a simmer.
- Add the shredded chicken back into the pot and stir to combine.
- In a separate bowl, combine flour, baking powder, salt, and milk to make the dumpling dough. Drop spoonfuls of the dough into the simmering broth.
- Cover and cook for 15-20 minutes until dumplings are fluffy and cooked through.
- Check seasoning and adjust as needed before serving.
