- 1 cup yellow cornmeal
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 4 tablespoons unsalted butter (melted)
Instructions
- Preheat oven to 425°F. If using a cast iron skillet, place it in the oven to heat.
- In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, and salt.
- In another bowl, whisk the egg with buttermilk, then slowly add melted butter.
- Combine wet ingredients with dry, stirring just until mixed.
- Remove hot skillet from oven, coat with butter or oil, and pour in batter.
- Bake for 20–25 minutes until golden brown and a toothpick comes out clean.
- Cool for 10 minutes before slicing. Serve warm.
