Description

Ingredients

  • 2 cups (240g) all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon lemon zest
  • 1 cup (227g) sourdough starter discard
  • ¾ cup (150g) brown sugar
  • ½ cup melted butter (or coconut oil)
  • 2 large eggs
  • 2 tablespoons lemon juice
  • ¼ cup milk
  • 1 cup blueberries
  • ¼ cup powdered sugar (for glaze)
  • 1 tablespoon lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan with butter or line it with parchment paper.
  2. In a large bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, and lemon zest.
  3. In a separate bowl, mix together the wet ingredients: sourdough discard, brown sugar, butter (or coconut oil), eggs, milk, and lemon juice. Stir until well combined.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Gently fold in the blueberries, making sure they are evenly distributed throughout the batter.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean. If the top begins to brown too quickly, cover loosely with aluminum foil.
  8. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. For the glaze, whisk together powdered sugar and lemon juice. Drizzle over the cooled bread and enjoy!
