  • 1 cup (240g) full-fat sour cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk (for brushing)
  • 2 tablespoons coarse sugar

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, sugar, baking powder, and salt in a large bowl until combined.
  3. Add the cold cubed butter to the flour mixture and work it in until resembling coarse crumbs.
  4. Whisk the sour cream, egg, and vanilla extract in a separate bowl until smooth.
  5. Pour the wet mixture into the dry ingredients and gently stir until the dough comes together.
  6. Turn the dough onto a floured surface and press it into a round disc about 1 inch thick.
  7. Cut the disc into 8 equal triangles and place them on the baking sheet.
  8. Brush the tops with milk, sprinkle with coarse sugar, and bake for 16–20 minutes until golden brown.
  9. Allow to cool on the baking sheet before transferring to a rack, then serve warm or at room temperature.
