Description

- 1 cup raisins
- 1 cup water
- 3/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 2 large egg yolks
- 1 cup full-fat sour cream
- 1 tablespoon unsalted butter
- 1 teaspoon pure vanilla extract
- 2 large egg whites, room temperature
- 1/4 teaspoon cream of tartar
- 4 tablespoons granulated sugar
Instructions
- Place the raisins and water in a small saucepan and bring to a gentle boil over medium heat. Reduce heat slightly and simmer for 5 minutes until the raisins plump.
- Whisk together the sugar, cornstarch, and salt in a bowl. Stir this mixture into the saucepan with the raisins and their liquid. Cook over medium heat, stirring constantly, until the mixture thickens and begins to bubble.
- Lightly beat the egg yolks in a small bowl. Gradually whisk in a few spoonfuls of the hot raisin mixture to warm the yolks slowly. Pour the tempered yolks back into the saucepan and cook for 2–3 more minutes, stirring constantly, until the custard becomes thick and smooth.
- Remove the saucepan from heat. Stir in the sour cream, butter, and vanilla extract until fully combined and silky. Pour the warm filling into the pre-baked pie crust and spread it evenly.
- Place the egg whites and cream of tartar in a clean mixing bowl. Beat until soft peaks form. Add the sugar one tablespoon at a time while continuing to beat until stiff, glossy peaks form.
- Spoon the meringue over the hot filling immediately. Spread it gently to the edges of the crust so it seals completely.
- Bake at 350°F (175°C) for 10–12 minutes until the meringue turns lightly golden.
- Let the pie cool at room temperature until fully set, then refrigerate for at least 2 hours before slicing.
