Sopapilla Cheesecake Bars are a delightful dessert combining creamy cheesecake with flaky, sweet sopapilla goodness. These easy-to-make bars feature a cinnamon-sugar topping and are perfect for sharing.

Ingredients

Scale
  • 2 cans (8 oz each) refrigerated crescent roll dough
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a mixing bowl, beat the softened cream cheese, 1 cup of sugar, vanilla extract, and 1/2 teaspoon of cinnamon until smooth and creamy.
  3. Unroll one can of crescent roll dough and lay it flat in the bottom of the prepared baking dish. Press the seams together to seal.
  4. Evenly spread the cream cheese mixture over the dough layer.
  5. Unroll the second can of crescent roll dough and place it over the cream cheese mixture, sealing the seams.
  6. In a small bowl, combine the melted butter, 1/2 cup of sugar, and 1 teaspoon of cinnamon. Mix well.
  7. Pour the cinnamon-sugar mixture evenly over the top layer of crescent dough.
  8. Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the cheesecake filling is set.
  9. Remove from the oven and allow to cool for at least 30 minutes before slicing into bars.
  10. Serve warm or at room temperature.
