Description
These soft gingerbread cookies are chewy, spiced with cinnamon, cloves, and ginger, and full of molasses flavor.
Ingredients

- 2 cups flour
- 1/2 tsp salt
- 2 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp ginger
- 3/4 cup shortening
- 1 cup sugar (plus extra for rolling)
- 1 egg
- 1/4 cup molasses
Instructions
- Preheat the oven to 350°F (175°C) and prepare a cookie sheet with parchment paper or a silicone baking mat.
- In a medium bowl, mix the dry ingredients: flour, baking soda, salt, cinnamon, cloves, and ginger. Set aside.
- In a separate bowl, cream together the shortening, sugar, egg, and molasses. Beat for about 2–3 minutes until smooth.
- Gradually add the dry ingredients to the wet mixture and mix until fully combined.
- Scoop tablespoon-sized balls of dough and roll them in sugar. Place them on the prepared cookie sheet, slightly flattening them with your hand or a glass.
- Bake for 10 minutes or until the edges are set but the centers are still slightly underdone.
- Let the cookies cool on the sheet for a few minutes before transferring to a wire rack to cool completely.
