Description

Ingredients

  • 1/2 tsp salt
  • 2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ginger
  • 3/4 cup shortening
  • 1 cup sugar (plus extra for rolling)
  • 1 egg
  • 1/4 cup molasses

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a cookie sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, mix the dry ingredients: flour, baking soda, salt, cinnamon, cloves, and ginger. Set aside.
  3. In a separate bowl, cream together the shortening, sugar, egg, and molasses. Beat for about 2–3 minutes until smooth.
  4. Gradually add the dry ingredients to the wet mixture and mix until fully combined.
  5. Scoop tablespoon-sized balls of dough and roll them in sugar. Place them on the prepared cookie sheet, slightly flattening them with your hand or a glass.
  6. Bake for 10 minutes or until the edges are set but the centers are still slightly underdone.
  7. Let the cookies cool on the sheet for a few minutes before transferring to a wire rack to cool completely.
