Description

Savory Southern-Style Smothered Chicken and Rice recipe. Juicy, seasoned chicken smothered in rich homemade gravy and served over fluffy white rice.


Ingredients

  • 46 bone-in, skin-on chicken pieces (thighs or drumsticks)
  • 1 cup long-grain white rice
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth (plus more for rice)
  • 1/4 cup all-purpose flour
  • 2 tablespoons cooking oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Optional: cayenne pepper (to taste), fresh parsley or green onions for garnish

Instructions

  1. Season chicken with salt, pepper, and paprika. Dredge in flour.
  2. Heat oil in a large skillet. Brown chicken on all sides, then remove.
  3. Sauté onions and bell peppers until soft. Stir in garlic.
  4. Sprinkle in flour, cook for 1–2 minutes. Gradually stir in chicken broth to make smooth gravy.
  5. Add chicken back to skillet. Cover and simmer for 30–40 minutes until tender.
  6. In a separate pot, cook rice in broth until tender.
  7. Plate rice, top with chicken and gravy. Garnish as desired.
