- 1 lb baby potatoes
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 cup crumbled feta cheese
- 2 tbsp fresh parsley or dill, chopped

Instructions
- Preheat your oven to 425°F (220°C).
- Wash and dry the baby potatoes thoroughly.
- Boil the potatoes in salted water until they are fork-tender, about 15-20 minutes.
- Drain the potatoes and let them cool slightly.
- Gently smash each potato using a glass or measuring cup, so they flatten but stay intact.
- Arrange the smashed potatoes on a lined baking sheet.
- Drizzle the olive oil over the potatoes, then season them with salt and pepper; toss gently to coat evenly.
- Bake for 20-25 minutes, or until they are golden brown and crispy.
- Remove the baking sheet from the oven, sprinkle the crumbled feta and fresh herbs on top, then return briefly to the oven to melt the cheese.
