Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the baby potatoes thoroughly.
  3. Boil the potatoes in salted water until they are fork-tender, about 15-20 minutes.
  4. Drain the potatoes and let them cool slightly.
  5. Gently smash each potato using a glass or measuring cup, so they flatten but stay intact.
  6. Arrange the smashed potatoes on a lined baking sheet.
  7. Drizzle the olive oil over the potatoes, then season them with salt and pepper; toss gently to coat evenly.
  8. Bake for 20-25 minutes, or until they are golden brown and crispy.
  9. Remove the baking sheet from the oven, sprinkle the crumbled feta and fresh herbs on top, then return briefly to the oven to melt the cheese.
