- 1 whole chicken, approximately 5 pounds
- 2 whole garlic cloves
- 1/4 to 1/2 cup salsa
- 2 tablespoons olive oil
- 3 tablespoons Cajun seasoning
- 1 (12-fluid ounce) can beer
Instructions
- Brush the entire exterior of the whole chicken with olive oil, ensuring thorough coverage.
- Generously apply Cajun seasoning over the chicken, gently rubbing it in to adhere to the oiled surface.
- Carefully open the beer can and pour out or consume approximately half of its contents. Place the partially filled can into an upright chicken roaster.
- Drop the two whole garlic cloves into the beer can within the roaster.
- Carefully position the prepared chicken over the roaster so the beer can fits snugly within the chicken’s cavity, ensuring the chicken stands upright.
- Preheat your oven to 375°F. Place the chicken-on-roaster assembly in the oven and roast for approximately 120 minutes, or until an internal temperature of 165°F is reached in the thickest part of the thigh.
- Alternatively, preheat a grill for indirect medium-low heat (approximately 300-350°F). Place the chicken-on-roaster assembly on the indirect heat side of the grill and cook for approximately 120 minutes, or until an internal temperature of 165°F is reached.
- Warm the salsa slightly if desired, and serve alongside the roasted chicken as a flavorful accompaniment.
