A hearty and flavorful slow cooker turkey meatball soup that is perfect for a cozy dinner.


Ingredients

  • 1 lb ground turkey
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 2 cups fresh spinach
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp Italian seasoning
  • 1 parmesan rind
  • 1 cup small pasta
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix ground turkey with salt, pepper, and Italian seasoning. Form into meatballs.
  2. Place meatballs in the slow cooker.
  3. Add chicken broth, diced tomatoes, carrots, celery, onion, garlic, and parmesan rind to the slow cooker.
  4. Cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, add the small pasta and spinach.
  6. Stir well and let it cook until the pasta is tender.
  7. Remove the parmesan rind before serving.
