A hearty and flavorful slow cooker turkey meatball soup that is perfect for a cozy dinner.
Ingredients

- 1 lb ground turkey
- 4 cups chicken broth
- 1 can diced tomatoes
- 2 cups fresh spinach
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tsp Italian seasoning
- 1 parmesan rind
- 1 cup small pasta
- Salt and pepper to taste
Instructions
- In a bowl, mix ground turkey with salt, pepper, and Italian seasoning. Form into meatballs.
- Place meatballs in the slow cooker.
- Add chicken broth, diced tomatoes, carrots, celery, onion, garlic, and parmesan rind to the slow cooker.
- Cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, add the small pasta and spinach.
- Stir well and let it cook until the pasta is tender.
- Remove the parmesan rind before serving.
