Ingredients
Scale
- 1 medium white onion (sliced)
- 4 cloves garlic (chopped)
- 1 medium red jalapeño pepper
- 2 inches fresh galangal or ginger
- 1 stalk lemongrass
- 3 leaves lime leaves (optional)
- 3 tablespoons red Thai curry paste
- 4 cups chicken broth
- 1 can coconut milk or cream
- 1 pound chicken breasts
- 8 ounces white mushroom caps
- 1 tablespoon brown sugar or coconut sugar
- 2 tablespoons fish sauce
- 2 tablespoons fresh lime juice
Instructions
- Combine ingredients: Add white onion slices, chopped garlic, red jalapeño pepper, fresh galangal, lemongrass, lime leaves, red Thai curry paste, and chicken broth to your slow cooker. Mix gently until everything is blended.
- Cook the base: Place the lid on the slow cooker. Cook the mixture on HIGH for 3 hours, or LOW for 6 hours, stirring occasionally.
- Remove solids: Use a slotted spoon to take out the solid ingredients, leaving the fragrant liquid behind in the slow cooker.
- Add creamy components: Stir in coconut milk, chicken breasts, and white mushroom caps into the remaining broth.
- Continue cooking: Cover the slow cooker again. Cook on HIGH for 1 hour or LOW for 2 hours.
- Enhance flavors: Once the chicken is ready, add brown sugar, fish sauce, and fresh lime juice. Mix well to incorporate everything.
- Serve and enjoy: Ladle the soup into serving bowls, garnishing each with thinly sliced green onions and chopped fresh cilantro.
