This Slow Cooker Italian Beef Sandwich is the ultimate comfort food — tender, shredded beef simmered in bold Italian spices, served hot in soft hoagie rolls.

- 3–4 lb chuck roast
- 1 packet Italian dressing seasoning mix
- 1 cup beef broth
- 1 jar (16 oz) pepperoncini peppers (with juice)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp crushed red pepper flakes (optional)
- 6–8 hoagie rolls
- Optional toppings: provolone cheese, sautéed peppers, giardiniera
Instructions
- Place chuck roast in a slow cooker. Sprinkle with Italian seasoning, garlic powder, and onion powder.
- Pour beef broth and entire jar of pepperoncini (including juice) over the roast.
- Cover and cook on low for 8–10 hours or high for 4–5 hours, until beef is fall-apart tender.
- Shred the beef in the slow cooker and let it soak in the juices for 15–20 minutes.
- Pile the meat onto hoagie rolls. Add provolone and broil for 2–3 minutes if desired.
- Serve with extra juice on the side for dipping, or top with giardiniera for that Chicago-style kick.
