Ingredients

- 3 to 4 pounds chuck roast
- 4 cups beef broth
- 2 tablespoons Worcestershire sauce
- 4 cloves garlic
- 1 large onion
- 2 tablespoons soy sauce
- 1 teaspoon dried thyme
- 1 bay leaf
- 6 slices provolone cheese
- 6 hoagie rolls
Instructions
- Trim excess fat from the chuck roast and place it in the slow cooker.
- Slice the onion and peel the garlic cloves. Add both to the slow cooker.
- Pour in beef broth, Worcestershire sauce, and soy sauce.
- Add thyme and bay leaf to the pot.
- Cover and cook on low for 8 hours or high for 4 hours, until beef is tender.
- Remove beef, shred it with two forks, and set aside.
- Strain the broth, discarding solids. Save the liquid as au jus.
- Toast hoagie rolls under the broiler.
- Pile shredded beef on rolls and top with provolone slices.
- Broil for 1 to 2 minutes until cheese is melted and bubbly.
- Serve sandwiches hot with a small bowl of warm au jus for dipping.
