- 2 lbs boneless chuck roast, cubed
- 4 cloves fresh garlic, minced
- 1 large yellow onion, diced
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 2 cups beef broth
- 2 tbsp chili powder
- 1 tsp ground cumin
- Salt and pepper to taste
Instructions
- Season the cubed chuck roast with salt and pepper.
- In a skillet over medium heat, add oil and sauté onions and garlic until fragrant (3-4 minutes).
- Layer sautéed onions and garlic in the slow cooker; add the chuck roast, diced tomatoes (with juices), beef broth, chili powder, and cumin. Stir gently.
- Cover and cook on low for 8 hours or high for 4 hours.
- After cooking, shred larger meat pieces with forks directly in the pot; stir well before serving.
