  • 2 lbs boneless chuck roast, cubed
  • 4 cloves fresh garlic, minced
  • 1 large yellow onion, diced
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 2 cups beef broth
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • Salt and pepper to taste

Instructions

  1. Season the cubed chuck roast with salt and pepper.
  2. In a skillet over medium heat, add oil and sauté onions and garlic until fragrant (3-4 minutes).
  3. Layer sautéed onions and garlic in the slow cooker; add the chuck roast, diced tomatoes (with juices), beef broth, chili powder, and cumin. Stir gently.
  4. Cover and cook on low for 8 hours or high for 4 hours.
  5. After cooking, shred larger meat pieces with forks directly in the pot; stir well before serving.
