Ingredients

  • 2 cups uncooked rice
  • 4 boneless, skinless chicken fillets
  • 1 can cream of chicken soup
  • 1 cup low-sodium chicken broth
  • 2 cups shredded cheese (cheddar and Monterey Jack blend recommended)
  • 1 package ranch seasoning mix
  • 1 cup frozen peas
  • Salt and pepper to taste

Instructions

  1. Place the chicken fillets in a single layer at the bottom of your slow cooker.
  2. In a separate bowl, combine the cream of chicken soup, chicken broth, and ranch seasoning mix. Stir until well blended.
  3. Pour the creamy mixture evenly over the chicken fillets.
  4. Sprinkle the uncooked rice over the top of the chicken and sauce mixture. Do not stir.
  5. Cover the slow cooker and cook on low for 5-6 hours.
  6. About 30 minutes before serving, stir in the frozen peas.
  7. Just before serving, stir in the shredded cheese until it is melted and creamy.
  8. Serve hot and enjoy your slow cooker cheesy chicken and rice.
