Slow Cooker Beef Stew – Ultimate Comfort Food Recipe

- 2 pounds beef chuck roast (cut into 1-inch cubes)
- 4 medium carrots (peeled and sliced)
- 3 medium potatoes (peeled and diced)
- 1 large onion (diced)
- 3 cloves garlic (minced)
- 2 cups beef broth
- 1 cup red wine (optional; can substitute with more broth)
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper (to taste)
- 2 tablespoons olive oil (for browning the beef)
- 2 tablespoons cornstarch (optional)
- 2 tablespoons water (optional)
Instructions
- In a large skillet over medium-high heat, add the olive oil.
- Season the beef cubes with salt and pepper. Add them to the skillet in batches, browning on all sides (about 5-7 minutes). Transfer the browned beef to the slow cooker.
- In the slow cooker, add the carrots, potatoes, onion, and garlic on top of the beef.
- In a bowl, whisk together the beef broth, red wine (if using), tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaf. Pour this mixture over the beef and vegetables in the slow cooker.
- Cover the slow cooker and set it to cook on low for 8 hours or high for 4 hours, until the beef is tender and the flavors are well combined.
- If you prefer a thicker stew, mix the cornstarch with water in a small bowl to create a slurry.
- About 30 minutes before serving, stir the cornstarch slurry into the stew and let it cook uncovered to thicken.
- Before serving, remove the bay leaf.
- Serve the stew hot, garnished with fresh parsley if desired, and enjoy your ultimate comfort food!
