  • 4 medium carrots (peeled and sliced)
  • 3 medium potatoes (peeled and diced)
  • 1 large onion (diced)
  • 3 cloves garlic (minced)
  • 2 cups beef broth
  • 1 cup red wine (optional; can substitute with more broth)
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper (to taste)
  • 2 tablespoons olive oil (for browning the beef)
  • 2 tablespoons cornstarch (optional)
  • 2 tablespoons water (optional)

Instructions

  1. In a large skillet over medium-high heat, add the olive oil.
  2. Season the beef cubes with salt and pepper. Add them to the skillet in batches, browning on all sides (about 5-7 minutes). Transfer the browned beef to the slow cooker.
  3. In the slow cooker, add the carrots, potatoes, onion, and garlic on top of the beef.
  4. In a bowl, whisk together the beef broth, red wine (if using), tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaf. Pour this mixture over the beef and vegetables in the slow cooker.
  5. Cover the slow cooker and set it to cook on low for 8 hours or high for 4 hours, until the beef is tender and the flavors are well combined.
  6. If you prefer a thicker stew, mix the cornstarch with water in a small bowl to create a slurry.
  7. About 30 minutes before serving, stir the cornstarch slurry into the stew and let it cook uncovered to thicken.
  8. Before serving, remove the bay leaf.
  9. Serve the stew hot, garnished with fresh parsley if desired, and enjoy your ultimate comfort food!
