- 2 1/2 teaspoons sugar
- 2 1/2 teaspoons rice wine vinegar
- 2 teaspoons fish sauce
- 2 teaspoons fresh lime juice
- 1/3 cup lightly packed cilantro leaves
- 2/3 cup mayonnaise
- 1 tablespoon Sriracha Hot Chili Sauce
- 1 teaspoon honey
Instructions
- Use a vegetable peeler to shave thin strips of the carrot. Aim for enough to fill about 1/2 cup, and chop any long strips into 2-inch lengths for easy layering.
- Whisk together lime juice, rice wine vinegar, fish sauce, and sugar in a bowl. Add the shredded cabbage, carrot, and cilantro. Mix well and let this zesty slaw sit to absorb the flavors.
- In a mixing bowl, combine mayonnaise, Sriracha, and honey. Mix until smooth, then refrigerate to let the flavors meld while you prepare the rest.
- If using large shrimp, chop them into 1 1/2-inch pieces. Preheat 1/4 inch of neutral oil in a pan over medium heat (about 350°F) for frying.
- In a mixing bowl, whisk together flour, cornstarch, baking powder, and all dry seasonings. Gradually add ice-cold water, mixing until just combined—small lumps are okay! Add shrimp and scallions, stirring gently.
- Use a slotted spoon to carefully drop spoonfuls of tempura batter into the hot oil, forming 3 1/2-inch flat round patties. Ensure not to overcrowd the pan.
- Fry for 3 to 3.5 minutes, turning halfway, until the tempura is golden and shrimp are opaque. Transfer to a metal cooling rack to drain excess oil.
- Toast the hamburger buns until lightly golden. Spread Sriracha mayo on the top and bottom buns. Layer a shrimp tempura patty on the bottom bun, top with Asian slaw, and crown it with the top bun.
