- 8 ounces linguine or spaghetti
- 1 pound large shrimp (peeled and deveined)
- 3 tablespoons unsalted butter
- 3 tablespoons olive oil
- 4 cloves garlic (minced)
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup dry white wine (or chicken broth)
- Juice of 1 lemon
- Salt and pepper to taste
- 1/4 cup fresh parsley (chopped, for garnish)
- Grated Parmesan cheese (for serving)
Instructions
- In a large pot of salted boiling water, cook the linguine or spaghetti according to package instructions until al dente. Reserve about 1/2 cup of pasta water before draining the pasta.
- In a large skillet, heat 3 tablespoons of olive oil and 3 tablespoons of butter over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant. Add the shrimp to the skillet, seasoning with salt and pepper. Cook until the shrimp turn pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
- In the same skillet, pour in the white wine (or chicken broth) and bring to a simmer, scraping up any browned bits from the bottom of the pan. Allow the liquid to reduce by half, which should take about 2-3 minutes. Stir in the lemon juice and remaining butter.
- Add the drained pasta to the skillet, tossing to coat in the sauce. If the pasta seems dry, add reserved pasta water a little at a time until the desired consistency is reached. Return the cooked shrimp to the skillet and toss everything together.
- Plate the shrimp scampi pasta and garnish with fresh parsley and grated Parmesan cheese. Serve immediately for the best flavor.
