  • 1 pound large shrimp (peeled and deveined)
  • 3 tablespoons unsalted butter
  • 3 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine (or chicken broth)
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 1/4 cup fresh parsley (chopped, for garnish)
  • Grated Parmesan cheese (for serving)

Instructions

  1. In a large pot of salted boiling water, cook the linguine or spaghetti according to package instructions until al dente. Reserve about 1/2 cup of pasta water before draining the pasta.
  2. In a large skillet, heat 3 tablespoons of olive oil and 3 tablespoons of butter over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant. Add the shrimp to the skillet, seasoning with salt and pepper. Cook until the shrimp turn pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, pour in the white wine (or chicken broth) and bring to a simmer, scraping up any browned bits from the bottom of the pan. Allow the liquid to reduce by half, which should take about 2-3 minutes. Stir in the lemon juice and remaining butter.
  4. Add the drained pasta to the skillet, tossing to coat in the sauce. If the pasta seems dry, add reserved pasta water a little at a time until the desired consistency is reached. Return the cooked shrimp to the skillet and toss everything together.
  5. Plate the shrimp scampi pasta and garnish with fresh parsley and grated Parmesan cheese. Serve immediately for the best flavor.
