- 0.5 cup chopped onion (red and yellow are fine)
- 5 cloves garlic, minced (or garlic powder)
- 1.5 cups cooked corn kernels (fresh or canned corn)
- 1 teaspoon smoked paprika (or regular paprika)
- 1 cup half-and-half (or coconut milk)
- 4 oz feta cheese, divided (crumbled or dairy-free alternative)
- 2 small limes (or lemons)
- 1 bunch fresh cilantro (or parsley)
Instructions
- Heat olive oil in a large skillet over medium heat. Season the shrimp with chili powder and salt, and cook until they turn pink and opaque, about 3-4 minutes. Remove the shrimp and set aside.
- In the same skillet, melt the butter. Add the chopped onions along with a pinch of salt, cooking until they soften, about 3 minutes. Stir occasionally to prevent burning.
- Mix in the minced garlic, and continue cooking for an additional 2 minutes until fragrant. Be cautious not to let it brown too much.
- Add the cooked corn kernels and smoked paprika to the skillet. Stir gently to ensure the corn is evenly distributed and heated through.
- Pour in the half-and-half and bring to a gentle simmer. Stir in the crumbled feta cheese until it melts and creates a creamy sauce, adjusting the heat as necessary.
- Squeeze fresh lime juice into the sauce and return the shrimp to the skillet to reheat. Top with the remaining corn, sliced limes, and a sprinkle of chopped cilantro. Taste and adjust seasoning as needed.
