  • 0.5 cup chopped onion (red and yellow are fine)
  • 5 cloves garlic, minced (or garlic powder)
  • 1.5 cups cooked corn kernels (fresh or canned corn)
  • 1 teaspoon smoked paprika (or regular paprika)
  • 1 cup half-and-half (or coconut milk)
  • 4 oz feta cheese, divided (crumbled or dairy-free alternative)
  • 2 small limes (or lemons)
  • 1 bunch fresh cilantro (or parsley)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season the shrimp with chili powder and salt, and cook until they turn pink and opaque, about 3-4 minutes. Remove the shrimp and set aside.
  2. In the same skillet, melt the butter. Add the chopped onions along with a pinch of salt, cooking until they soften, about 3 minutes. Stir occasionally to prevent burning.
  3. Mix in the minced garlic, and continue cooking for an additional 2 minutes until fragrant. Be cautious not to let it brown too much.
  4. Add the cooked corn kernels and smoked paprika to the skillet. Stir gently to ensure the corn is evenly distributed and heated through.
  5. Pour in the half-and-half and bring to a gentle simmer. Stir in the crumbled feta cheese until it melts and creates a creamy sauce, adjusting the heat as necessary.
  6. Squeeze fresh lime juice into the sauce and return the shrimp to the skillet to reheat. Top with the remaining corn, sliced limes, and a sprinkle of chopped cilantro. Taste and adjust seasoning as needed.
