- 1.5 pounds pork tenderloin
- 1/4 cup pure maple syrup
- 2 tbsp Dijon mustard
- 3 cloves garlic, minced
- 1 tsp dried thyme
- Salt and pepper to taste
- 3 medium carrots, cut into sticks
- 2 medium parsnips, peeled and sliced
- 1 large red onion, cut into wedges
- 2 tbsp olive oil
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, whisk together maple syrup, Dijon mustard, minced garlic, thyme, salt, and pepper.
- Place the pork tenderloin on a lined baking sheet and coat it with half of the maple-mustard mixture.
- Toss carrots, parsnips, and red onion in olive oil, salt, and pepper.
- Arrange the vegetables around the pork on the baking sheet.
- Roast in the oven for about 25-30 minutes until the pork reaches an internal temperature of at least 145°F (63°C). Brush on remaining sauce halfway through cooking for extra flavor.
- Let rest for a few minutes before slicing and serving with roasted veggies.
