Ingredients

  • 1.5 pounds pork tenderloin
  • 1/4 cup pure maple syrup
  • 2 tbsp Dijon mustard
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 3 medium carrots, cut into sticks
  • 2 medium parsnips, peeled and sliced
  • 1 large red onion, cut into wedges
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, whisk together maple syrup, Dijon mustard, minced garlic, thyme, salt, and pepper.
  3. Place the pork tenderloin on a lined baking sheet and coat it with half of the maple-mustard mixture.
  4. Toss carrots, parsnips, and red onion in olive oil, salt, and pepper.
  5. Arrange the vegetables around the pork on the baking sheet.
  6. Roast in the oven for about 25-30 minutes until the pork reaches an internal temperature of at least 145°F (63°C). Brush on remaining sauce halfway through cooking for extra flavor.
  7. Let rest for a few minutes before slicing and serving with roasted veggies.
