- 4 boneless, skinless chicken breasts (1.5 lbs)
- 1 lb baby potatoes, halved (red or yellow)
- 3 cloves fresh garlic, minced
- 3 tbsp freshly squeezed lemon juice
- 3 tbsp balsamic vinegar
- 3 tbsp extra virgin olive oil
- 1 tbsp honey
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, whisk together olive oil, balsamic vinegar, lemon juice, honey, garlic, Italian seasoning, salt, and pepper.
- Place chicken breasts on a baking sheet; toss baby potatoes in half of the marinade until well coated.
- Arrange the potatoes next to the chicken and drizzle any remaining marinade over both.
- Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender.
- Serve hot with drizzled sauce over everything for extra flavor.
