Sheet Pan Lemon Balsamic Chicken and Potatoes is a delicious, hassle-free one-pan meal that brings together juicy chicken and tender baby potatoes, all infused with zesty lemon and rich balsamic flavors.


Ingredients

  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 1 lb baby potatoes, halved (red or yellow)
  • 3 cloves fresh garlic, minced
  • 3 tbsp freshly squeezed lemon juice
  • 3 tbsp balsamic vinegar
  • 3 tbsp extra virgin olive oil
  • 1 tbsp honey
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together olive oil, balsamic vinegar, lemon juice, honey, garlic, Italian seasoning, salt, and pepper.
  3. Place chicken breasts on a baking sheet; toss baby potatoes in half of the marinade until well coated.
  4. Arrange the potatoes next to the chicken and drizzle any remaining marinade over both.
  5. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender.
