- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup cashews
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1/2 cup carrots, sliced
- 2 tbsp soy sauce or tamari
- 2 tbsp honey or maple syrup
- 1 tbsp sesame oil
- 2 garlic cloves, minced
- 1 tsp grated fresh ginger
- Salt and pepper to taste
- Green onions for garnish (optional)
Instructions
- Preheat oven to 200°C / 400°F and line a sheet pan with parchment paper.
- In a bowl, whisk together soy sauce, honey, sesame oil, garlic, and ginger.
- Place chicken, vegetables, and cashews on the sheet pan and pour sauce over. Toss to coat evenly.
- Spread in a single layer and season with salt and pepper.
- Bake 20–25 minutes until chicken is cooked through and vegetables are tender, stirring halfway through.
- Garnish with sliced green onions and serve warm over rice or noodles if desired.
