Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup cashews
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1/2 cup carrots, sliced
  • 2 tbsp soy sauce or tamari
  • 2 tbsp honey or maple syrup
  • 1 tbsp sesame oil
  • 2 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. Preheat oven to 200°C / 400°F and line a sheet pan with parchment paper.
  2. In a bowl, whisk together soy sauce, honey, sesame oil, garlic, and ginger.
  3. Place chicken, vegetables, and cashews on the sheet pan and pour sauce over. Toss to coat evenly.
  4. Spread in a single layer and season with salt and pepper.
  5. Bake 20–25 minutes until chicken is cooked through and vegetables are tender, stirring halfway through.
  6. Garnish with sliced green onions and serve warm over rice or noodles if desired.
