  • 2 boxes instant vanilla pudding mix (3.4oz size)
  • 2 cups milk (or cream)
  • 1 teaspoon mint extract (NOT peppermint extract)
  • 34 drops Green food coloring (can use plant based)
  • 8 oz whipped topping (such as Cool Whip)
  • Whipped cream
  • Maraschino cherries
  • Green sprinkles

Instructions

  1. Combine the pudding mix and milk, beating together until smooth.
  2. Mix in the mint extract and a green food coloring until you have your desired shade. Keep in mind that it will lighten up a little when you add the whipped topping.
  3. Fold in the whipped topping until well combined.
  4. Scoop into the pie crust, smoothing with a spatula.
  5. Chill in freezer until fully set.
