  • 2 teaspoons baking powder

  • 1/2 cup (120ml) unsalted butter, melted and cooled slightly
  • 2 large eggs, room temperature
  • 3/4 cup (180g) plain Greek yogurt
  • 1/2 cup (120ml) buttermilk (or regular milk + 1 teaspoon vinegar as a substitute)
  • 2 teaspoons pure vanilla extract
  • Zest of 1 lemon (optional)
  • Food coloring gel (red, blue, yellow, or any preferred colors)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt until well combined.
  3. In a separate bowl, whisk together eggs, melted butter, Greek yogurt, buttermilk, vanilla extract, and lemon zest (if using).
  4. Pour the wet ingredients into the dry ingredients. Gently fold with a spatula until just combined; do not overmix.
  5. Divide the batter evenly into three or four small bowls. Add gel food coloring to each bowl and mix until the color is even.
  6. Using a spoon or ice cream scoop, drop spoonfuls of colored batter into each muffin cup, alternating colors. Fill each cup about 3/4 full.
  7. Use a toothpick or skewer to gently swirl the colors in each muffin cup. Do not overmix.
  8. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Let the muffins cool in the pan for 5 minutes, then transfer to a cooling rack. Serve warm or at room temperature.
