Ingredients

  • 1 cup Vermicelli (Can use wheat or red rice vermicelli)
  • 2 tablespoons Ghee (Can substitute with butter or vegan butter)
  • 4 cups Whole Milk (Use almond or coconut milk for vegan option)
  • 1/2 cup Sugar (Adjust according to taste)
  • 1/2 teaspoon Cardamom Powder (Essential for flavor)
  • a pinch Saffron Strands (For golden hue and flavor)
  • 1/4 cup Almonds (Chopped; can substitute with other nuts)

Instructions

  1. Heat a tablespoon of ghee in a pan over medium heat, then add uncooked vermicelli. Sauté for about 3-4 minutes, stirring frequently until golden and aromatic.
  2. Pour in 4 cups of whole milk into the pan with the roasted vermicelli. Bring the mixture to a gentle boil while stirring to prevent the vermicelli from sticking to the bottom.
  3. Add sugar, cardamom powder, and saffron strands to the boiling mixture. Cook on low heat for about 10 minutes until thickened to your desired creamy consistency.
  4. In a separate small pan, heat a teaspoon of ghee and sauté the chopped almonds until golden brown, about 2-3 minutes. Add them to the kheer and stir well to combine.
  5. Dish out your Semiya Payasam warm, chilled, or at room temperature. Garnish with additional chopped nuts before serving if desired.
