- 4 cups Whole Milk (Use almond or coconut milk for vegan option)
- 1/2 cup Sugar (Adjust according to taste)
- 1/2 teaspoon Cardamom Powder (Essential for flavor)

- 1/4 cup Almonds (Chopped; can substitute with other nuts)
Instructions
- Heat a tablespoon of ghee in a pan over medium heat, then add uncooked vermicelli. Sauté for about 3-4 minutes, stirring frequently until golden and aromatic.
- Pour in 4 cups of whole milk into the pan with the roasted vermicelli. Bring the mixture to a gentle boil while stirring to prevent the vermicelli from sticking to the bottom.
- Add sugar, cardamom powder, and saffron strands to the boiling mixture. Cook on low heat for about 10 minutes until thickened to your desired creamy consistency.
- In a separate small pan, heat a teaspoon of ghee and sauté the chopped almonds until golden brown, about 2-3 minutes. Add them to the kheer and stir well to combine.
- Dish out your Semiya Payasam warm, chilled, or at room temperature. Garnish with additional chopped nuts before serving if desired.
