  • 1 cup Low-sodium chicken broth (Vegetable broth can work as well)
  • 1 cup Heavy cream (Coconut cream or Greek yogurt can be lighter options)
  • 1 tablespoon Italian seasoning (Replace with a mix of oregano, basil, and thyme if needed)
  • 1/2 teaspoon Red pepper flakes (Adjust according to heat preference)

Instructions

  1. Pat the boneless, skinless chicken breasts dry and season generously with salt and pepper.
  2. In a large skillet, heat the extra virgin olive oil over medium-high heat. Add the chicken breasts and cook for 5-7 minutes on each side until golden brown and cooked to 165°F.
  3. In the same skillet, reduce heat to medium and sauté the chopped yellow onion for about 5 minutes until translucent.
  4. Stir in the minced garlic and cook for an additional minute until aromatic.
  5. Deglaze the skillet with pepperoncini juice, then add chopped pepperoncini, chicken broth, Italian seasoning, and red pepper flakes. Simmer for about 5 minutes.
  6. Lower heat, add heavy cream, and return seared chicken to the skillet. Allow to simmer for an additional 5 minutes.
  7. Taste the sauce and adjust seasoning as necessary. Garnish with fresh parsley before serving over pasta or rice.
