Savory Parmesan Chicken Meatloaf


Ingredients

  • 1 lb ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup finely grated parmesan cheese
  • 2 cloves fresh garlic, minced
  • 2 large eggs
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup ketchup
  • 2 tbsp Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a large bowl, mix ground chicken, breadcrumbs, parmesan cheese, minced garlic, eggs, parsley, salt, and pepper until well combined.
  3. Shape the mixture into a loaf and place it in the prepared baking dish.
  4. In a small bowl, whisk together ketchup and Worcestershire sauce; spread half over the meatloaf before baking.
  5. Bake for 50-60 minutes or until the internal temperature reaches 165°F (74°C), brushing with more sauce halfway through.
  6. Let rest for 10 minutes before slicing and serving.
