- 2 bay leaves
- 2 tsp cornstarch mixed with 2 tbsp water

Instructions
- Prep ingredients: Clean and slice mushrooms; chop carrots, onions, and mince garlic.
- Sauté vegetables: In a large pot over medium heat, heat olive oil. Add onions; cook until translucent (5 minutes). Stir in garlic; cook until fragrant.
- Add mushrooms: Toss in mixed mushrooms with salt and pepper; cook until they release moisture (7 minutes).
- Deglaze with wine: Pour in red wine, scraping up brown bits from the pot; let simmer for about 5 minutes.
- Add remaining ingredients: Stir in carrots, vegetable broth, thyme, and bay leaves. Bring to a gentle boil then reduce heat; simmer for 20 minutes.
- Thicken the sauce: Slowly add cornstarch slurry while stirring; cook for another 5 minutes until thickened. Remove bay leaves before serving.
