- 4 oz (115 g) creamy goat cheese
- 10 slices thin-cut bacon
- 1 tablespoon honey (optional)
- 1 teaspoon fresh thyme leaves
- Freshly cracked black pepper, to taste

Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Make a lengthwise slit in each date and gently remove the pit if not already pitted, creating a pocket.
- In a small bowl, combine goat cheese with fresh thyme leaves and freshly cracked black pepper until smooth and creamy.
- Stuff each date’s pocket with the goat cheese mixture using a small spoon or piping bag.
- Slice each bacon strip in half lengthwise if thick. Wrap one half-strip snugly around each stuffed date and secure with a toothpick.
- Place the wrapped dates seam side down on the prepared baking sheet.
- Bake for 20-25 minutes until bacon is crispy and golden brown, watching closely to avoid burning.
- Optional: Drizzle honey over the baked dates for a touch of sweetness.
- Let cool for a few minutes before serving warm.
