Description

These savory bacon-wrapped dates stuffed with creamy goat cheese are an easy, crowd-pleasing appetizer combining smoky bacon, sweet dates, and tangy goat cheese for a perfect bite.

Ingredients

Scale
  • 20 large Medjool dates, pitted
  • 4 oz (115 g) creamy goat cheese
  • 10 slices thin-cut bacon
  • 1 tablespoon honey (optional)
  • 1 teaspoon fresh thyme leaves
  • Freshly cracked black pepper, to taste
  • Toothpicks

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Make a lengthwise slit in each date and gently remove the pit if not already pitted, creating a pocket.
  3. In a small bowl, combine goat cheese with fresh thyme leaves and freshly cracked black pepper until smooth and creamy.
  4. Stuff each date’s pocket with the goat cheese mixture using a small spoon or piping bag.
  5. Slice each bacon strip in half lengthwise if thick. Wrap one half-strip snugly around each stuffed date and secure with a toothpick.
  6. Place the wrapped dates seam side down on the prepared baking sheet.
  7. Bake for 20-25 minutes until bacon is crispy and golden brown, watching closely to avoid burning.
  8. Optional: Drizzle honey over the baked dates for a touch of sweetness.
  9. Let cool for a few minutes before serving warm.
