- 2 large sweet potatoes, peeled and cubed (about 4 cups)
- 1 red bell pepper, chopped
- 1 small red onion, sliced
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- 1 teaspoon smoked paprika (optional)
- 3 tablespoons honey
- 2 tablespoons soy sauce (or coconut aminos)
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- ½ teaspoon ground black pepper
- ½ teaspoon chili flakes (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, combine sweet potatoes, bell pepper, and onion. Toss with olive oil, salt, pepper, and smoked paprika. Spread on the sheet pan.
- Scatter sliced sausage evenly across the pan.
- Whisk together honey, soy sauce, olive oil, garlic, black pepper, and chili flakes.
- Drizzle half the sauce over everything. Roast 25–30 minutes, flipping halfway through.
- Drizzle remaining sauce in the last 5 minutes of roasting for a sticky finish.
- Let rest a few minutes before serving warm.

- Use turkey sausage, vegan sausage, or sliced chicken breast.
- Add Brussels sprouts, broccoli, or carrots.
