- 8 oz rice noodles or egg noodles
- 2 tbsp peanut butter (smooth or crunchy)
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 medium onion, sliced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 4 cups beef broth or stock
- 1 tbsp chili paste or sriracha (optional)
- 1 cup coconut milk
- 1 tbsp brown sugar
- 1 tbsp lime juice
- Fresh herbs (cilantro or Thai basil) for garnish
- Optional toppings: chopped peanuts, bean sprouts, green onions, fried shallots
Instructions
- Marinate thinly sliced beef in 1 tbsp soy sauce and 1 clove minced garlic while preparing the broth.
- In a large pot, sauté onion, garlic, and ginger in a bit of oil until fragrant.
- Stir in peanut butter, soy sauce, oyster sauce, brown sugar, and chili paste.
- Add beef broth gradually, stirring to combine, and bring to a gentle simmer.
- Pour in coconut milk and lime juice, then continue to simmer for 10–15 minutes.
- Cook noodles separately according to package instructions, then set aside.
- Add marinated beef to the broth and cook until just tender, about 2–3 minutes.
- Divide noodles into bowls, ladle soup and beef over the top.
- Garnish with fresh herbs and desired toppings. Serve hot.
