Description
These Santa Claus Macarons are a festive and fun holiday treat. With vibrant red macaron shells filled with a delicious sugar cookie buttercream and decorated with royal icing to resemble Santa’s iconic belt and buckle.

- 100 grams Domino® Golden Sugar
- 4 grams egg white powder (optional)
- 100 grams egg whites
- 105 grams almond flour
- 105 grams Domino® Powdered Sugar
- 1 1/2 cups Domino® Powdered Sugar (for royal icing)
- 1 tbsp meringue powder
- 4 tbsp water
- 2 drops black gel food coloring
- 1 drop yellow gel food coloring
- 1/2 cup all-purpose flour (for sugar cookie buttercream)
- 1/2 cup unsalted butter
- 1/4 cup Domino® Golden Sugar
- 1 1/4 cups Domino® Powdered Sugar
- 1 tsp vanilla extract
- 1/8 tsp almond extract
- 1/2 tbsp milk or heavy cream
- 1/4 cup desiccated coconut (shredded)
Instructions
- Preheat your oven to 300°F and prepare two baking sheets lined with parchment paper or silicone mats.
- Sift almond flour and powdered sugar together and set aside.
- Whisk granulated sugar and egg white powder over simmering water until the sugar dissolves. Add egg whites and whisk until stiff peaks form.
- Fold in the sifted almond flour mixture and add red gel food coloring until desired color is reached.
- Transfer the batter to a piping bag and pipe small circles onto the baking sheets.
- Tap the trays to release air bubbles and let the macaron shells rest for 1-2 hours until they form a dry skin.
- Bake each tray for 15-20 minutes, checking that the macarons have a smooth surface and feet.
- While baking, prepare royal icing by mixing powdered sugar, meringue powder, and water until glossy. Separate into two bowls and color one black and one yellow.
- Once the macaron shells have cooled, pipe black royal icing for Santa’s belt and yellow royal icing for the buckle.
- Prepare sugar cookie buttercream by mixing butter, sugars, and extracts. Add the heat-treated flour, mixing until smooth.
- Pipe the buttercream onto the bottom shells and sandwich with the decorated top shells. Roll the edges in shredded coconut for a snowy effect.
