Instructions

  1. Cream Butter, Oil, and Sugar: In a stand mixer with a paddle attachment, beat softened unsalted butter, vegetable oil, and light brown sugar on medium-high speed for 3-4 minutes until light and fluffy.
  2. Incorporate Wet Ingredients: On low speed, drizzle in honey, mixing until just combined. Add the large egg and vanilla extract, beating until fully incorporated. Scrape down the bowl.
  3. Whisk Dry Ingredients: In a separate medium bowl, whisk together all-purpose flour, baking soda, fine sea salt, and optional ground cinnamon until thoroughly combined.
  4. Combine Wet and Dry Mixtures: Reduce mixer speed to low. Gradually add the whisked dry ingredients to the wet ingredients in thirds, mixing only until just combined after each addition.
  5. Chill the Dough: Cover the bowl tightly with plastic wrap and refrigerate the dough for at least 2 hours, or preferably overnight.
  6. Preheat Oven and Prep Baking Sheets: Preheat your oven to 375°F (190°C). Line two large baking sheets with parchment paper.
