- 1 cup packed light brown sugar
- 1/2 cup honey
- 1 large egg
- 1 teaspoon vanilla extract

- 2–3 tablespoons flaky sea salt, for sprinkling
Instructions
- Cream Butter, Oil, and Sugar: In a stand mixer with a paddle attachment, beat softened unsalted butter, vegetable oil, and light brown sugar on medium-high speed for 3-4 minutes until light and fluffy.
- Incorporate Wet Ingredients: On low speed, drizzle in honey, mixing until just combined. Add the large egg and vanilla extract, beating until fully incorporated. Scrape down the bowl.
- Whisk Dry Ingredients: In a separate medium bowl, whisk together all-purpose flour, baking soda, fine sea salt, and optional ground cinnamon until thoroughly combined.
- Combine Wet and Dry Mixtures: Reduce mixer speed to low. Gradually add the whisked dry ingredients to the wet ingredients in thirds, mixing only until just combined after each addition.
- Chill the Dough: Cover the bowl tightly with plastic wrap and refrigerate the dough for at least 2 hours, or preferably overnight.
- Preheat Oven and Prep Baking Sheets: Preheat your oven to 375°F (190°C). Line two large baking sheets with parchment paper.
- Scoop and Arrange Dough: Using a 2-tablespoon cookie scoop, portion the chilled dough. Roll each portion into a smooth ball. Place dough balls on the prepared baking sheets, leaving about 2 inches of space between each.
- Bake Cookies: Bake one sheet at a time for 9 to 12 minutes, until the edges are lightly golden brown and set, but the centers still look slightly soft. Remove from oven and let cool on the baking sheets for 5 minutes.
- Add Flaky Sea Salt and Cool: Carefully transfer the cookies to a wire rack. While still warm, sprinkle each cookie with flaky sea salt. Allow cookies to cool completely on the wire rack.
