Ingredients

  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt

  • ½ cup coconut oil (melted and warm)
  • ⅔ cup coconut sugar
  • 2 teaspoons vanilla extract
  • 1 large egg
  • ⅔ cup full-fat coconut milk
  • ¼ cup coconut sugar or brown sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon sea salt

Instructions

  1. In a saucepan over medium heat, add coconut milk and coconut sugar. Whisk until warmed and sugar melts, then simmer.
  2. Cook for about ten minutes until a rich golden color appears and the sauce reduces slightly.
  3. Remove from heat, stir in salt and vanilla, and let cool.
  4. Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  5. In a medium bowl, mix almond flour, baking soda, spices (if using), and salt.
  6. In another bowl, combine melted coconut oil, coconut sugar, and vanilla. Stir until smooth. Add the egg and mix well. Gradually add dry ingredients.
  7. Scrape batter into the prepared pan and spread evenly.
  8. Divide cooled caramel into two portions. Swirl one portion through the batter.
  9. Bake for about 25 minutes. The edges should feel set, and the center should not wobble.
  10. Let blondies cool completely. Drizzle remaining caramel on top before slicing.
