These Salted Caramel Blondies are gluten-free, dairy-free, and refined sugar-free. Chewy, caramel-flavored blondies with a salted caramel swirl prove that healthier desserts can taste amazing.

- 1 2/3 cups almond flour
- ½ teaspoon baking soda
- ¼ teaspoon sea salt
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg (optional)
- 1 teaspoon ground ginger (optional)
- ½ cup coconut oil (melted and warm)
- ⅔ cup coconut sugar
- 2 teaspoons vanilla extract
- 1 large egg
- ⅔ cup full-fat coconut milk
- ¼ cup coconut sugar or brown sugar
- 1 teaspoon vanilla extract
- ¼ teaspoon sea salt
Instructions
- In a saucepan over medium heat, add coconut milk and coconut sugar. Whisk until warmed and sugar melts, then simmer.
- Cook for about ten minutes until a rich golden color appears and the sauce reduces slightly.
- Remove from heat, stir in salt and vanilla, and let cool.
- Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a medium bowl, mix almond flour, baking soda, spices (if using), and salt.
- In another bowl, combine melted coconut oil, coconut sugar, and vanilla. Stir until smooth. Add the egg and mix well. Gradually add dry ingredients.
- Scrape batter into the prepared pan and spread evenly.
- Divide cooled caramel into two portions. Swirl one portion through the batter.
- Bake for about 25 minutes. The edges should feel set, and the center should not wobble.
- Let blondies cool completely. Drizzle remaining caramel on top before slicing.
