  • 1/3 cup breadcrumbs
  • 1 large egg
  • 1/4 cup onion, finely grated or minced
  • 2 cloves garlic, minced
  • 1 tablespoon ketchup
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 1 small onion, thinly sliced
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon ketchup
  • 1/2 teaspoon soy sauce
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt, or to taste
  • 2 pounds Yukon Gold or russet potatoes, peeled and cubed
  • 4 tablespoons unsalted butter
  • 1/2 cup warm milk or heavy cream
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1 bunch asparagus, trimmed
  • 1 tablespoon butter or olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon lemon juice, optional
  • 1 tablespoon chopped parsley

Instructions

  1. In a large bowl, combine the ground beef, breadcrumbs, egg, onion, garlic, ketchup, Worcestershire sauce, salt, black pepper, onion powder, and garlic powder. Mix gently until just combined.
  2. Form the mixture into 12 to 14 even meatballs.
  3. Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook for 6 to 8 minutes, turning now and then, until browned on most sides. Transfer to a plate.
  4. In the same skillet, melt the butter and cook the sliced onion for 5 to 6 minutes until soft and lightly golden. Stir in the flour and cook for 1 minute.
  5. Slowly whisk in the beef broth. Add the Worcestershire sauce, ketchup, soy sauce, black pepper, and salt. Simmer until the gravy starts to thicken.
  6. Return the meatballs to the skillet. Spoon gravy over the tops, cover, and simmer for 10 to 12 minutes until cooked through.
  7. Place the potatoes in a pot, cover with cold salted water, and bring to a boil. Cook for 15 to 18 minutes until fork-tender, then drain.
  8. Add the butter, warm milk, salt, and black pepper to the potatoes. Mash until smooth and creamy.
  9. Heat the butter or olive oil in a skillet over medium heat. Add the asparagus and cook for 4 to 6 minutes until tender-crisp. Season with salt, black pepper, and lemon juice if using.
  10. Spoon the mashed potatoes onto plates or shallow bowls. Top with the Salisbury steak meatballs and onion gravy. Add the asparagus on the side and finish with chopped parsley.
