- 1/3 cup breadcrumbs
- 1 large egg
- 1/4 cup onion, finely grated or minced

- 1 tablespoon ketchup
- 1 tablespoon Worcestershire sauce

- 1/2 teaspoon black pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 1 small onion, thinly sliced
- 2 tablespoons all-purpose flour
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon ketchup
- 1/2 teaspoon soy sauce
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt, or to taste
- 2 pounds Yukon Gold or russet potatoes, peeled and cubed
- 4 tablespoons unsalted butter
- 1/2 cup warm milk or heavy cream
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 1 bunch asparagus, trimmed
- 1 tablespoon butter or olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon lemon juice, optional
- 1 tablespoon chopped parsley
Instructions
- In a large bowl, combine the ground beef, breadcrumbs, egg, onion, garlic, ketchup, Worcestershire sauce, salt, black pepper, onion powder, and garlic powder. Mix gently until just combined.
- Form the mixture into 12 to 14 even meatballs.
- Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook for 6 to 8 minutes, turning now and then, until browned on most sides. Transfer to a plate.
- In the same skillet, melt the butter and cook the sliced onion for 5 to 6 minutes until soft and lightly golden. Stir in the flour and cook for 1 minute.
- Slowly whisk in the beef broth. Add the Worcestershire sauce, ketchup, soy sauce, black pepper, and salt. Simmer until the gravy starts to thicken.
- Return the meatballs to the skillet. Spoon gravy over the tops, cover, and simmer for 10 to 12 minutes until cooked through.
- Place the potatoes in a pot, cover with cold salted water, and bring to a boil. Cook for 15 to 18 minutes until fork-tender, then drain.
- Add the butter, warm milk, salt, and black pepper to the potatoes. Mash until smooth and creamy.
- Heat the butter or olive oil in a skillet over medium heat. Add the asparagus and cook for 4 to 6 minutes until tender-crisp. Season with salt, black pepper, and lemon juice if using.
- Spoon the mashed potatoes onto plates or shallow bowls. Top with the Salisbury steak meatballs and onion gravy. Add the asparagus on the side and finish with chopped parsley.
