Description
Rotisserie Chicken Pho is a fast, flavorful twist on traditional Vietnamese pho.
Ingredients

- 1 rotisserie chicken
- 8 oz rice noodles (pho noodles)
- 1 yellow onion
- 3 inches fresh ginger
- 2 star anise
- 3 whole cloves
- 1 cinnamon stick
- 8 cups chicken broth
- 2 tbsp fish sauce
- 1 tsp sugar
- 1 cup bean sprouts
- 1/2 cup fresh cilantro
- 1/2 cup Thai basil
- 1 lime, cut into wedges
- 1 jalapeño, thinly sliced (optional)
- 2 tbsp hoisin sauce (for serving)
- 2 tbsp sriracha (for serving)
Instructions
- Slice the onion in half and smash the ginger. Char both in a dry skillet over medium heat until blackened in spots.
- In a large pot, add charred onion and ginger, chicken broth, star anise, cloves, and cinnamon stick. Simmer uncovered for 30 minutes.
- Add fish sauce and sugar to the broth, then strain and discard solids.
- Cook rice noodles according to package directions. Rinse with cool water and set aside.
- Shred rotisserie chicken into bite-sized pieces.
- Divide noodles into bowls, top with chicken, and ladle hot broth over everything.
- Garnish with herbs, bean sprouts, lime wedges, jalapeños, hoisin, and sriracha to taste. Serve immediately.
