Description

Rotisserie Chicken Pho is a fast, flavorful twist on traditional Vietnamese pho.


Ingredients

  • 1 rotisserie chicken
  • 8 oz rice noodles (pho noodles)
  • 1 yellow onion
  • 3 inches fresh ginger
  • 2 star anise
  • 3 whole cloves
  • 1 cinnamon stick
  • 8 cups chicken broth
  • 2 tbsp fish sauce
  • 1 tsp sugar
  • 1 cup bean sprouts
  • 1/2 cup fresh cilantro
  • 1/2 cup Thai basil
  • 1 lime, cut into wedges
  • 1 jalapeño, thinly sliced (optional)
  • 2 tbsp hoisin sauce (for serving)
  • 2 tbsp sriracha (for serving)

Instructions

  1. Slice the onion in half and smash the ginger. Char both in a dry skillet over medium heat until blackened in spots.
  2. In a large pot, add charred onion and ginger, chicken broth, star anise, cloves, and cinnamon stick. Simmer uncovered for 30 minutes.
  3. Add fish sauce and sugar to the broth, then strain and discard solids.
  4. Cook rice noodles according to package directions. Rinse with cool water and set aside.
  5. Shred rotisserie chicken into bite-sized pieces.
  6. Divide noodles into bowls, top with chicken, and ladle hot broth over everything.
  7. Garnish with herbs, bean sprouts, lime wedges, jalapeños, hoisin, and sriracha to taste. Serve immediately.
