- 1 can (10 oz) Rotel diced tomatoes (choose mild or spicy depending on preference)
- 1 cup cream cheese (softened)
- 1 cup shredded cheese (cheddar or cheese blend)
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- salt and pepper (to taste)
Instructions
- Gather all ingredients and measure them out to prepare for cooking.
- Boil pasta in salted water until al dente according to package directions. Reserve some pasta water, then drain and set aside.
- Heat olive oil in a skillet over medium heat until shimmering.
- Add Rotel diced tomatoes and cook for 2 minutes to blend flavors.
- Stir in softened cream cheese until melted and combined into a creamy sauce.
- Add the cooked pasta to the skillet and toss to coat in the sauce.
- Mix in shredded cheese, garlic powder, onion powder, salt, and pepper. Stir until cheese melts and sauce thickens.
- If the sauce is too thick, add a splash of reserved pasta water. Cook for another 2–3 minutes until creamy and well combined.
- Serve hot with a sprinkle of fresh herbs or extra cheese if desired.
