- 8 Roma or plum tomatoes, halved lengthwise
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 2 garlic cloves, minced
- 1 teaspoon sugar (optional)
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 8 ounces fresh mozzarella, sliced
- ½ cup fresh basil leaves, whole or torn
Instructions
- Preheat oven to 275°F (135°C).
- Place halved tomatoes cut side up on a parchment-lined baking sheet.
- Drizzle with olive oil and balsamic vinegar. Sprinkle evenly with minced garlic, sugar (if using), salt, and pepper.
- Roast in the oven for about 2 hours, or until tomatoes are shriveled and caramelized but still juicy.
- Remove from oven and let cool to room temperature.
- On a serving platter, alternate layers of roasted tomatoes and mozzarella slices.
- Scatter fresh basil leaves on top and finish with a light drizzle of olive oil or balsamic glaze.
- Serve immediately at room temperature.
