Ingredients

  • 12 oz Medjool dates, pitted
  • 4 oz goat cheese, softened
  • 1/3 cup walnuts, finely chopped
  • 2 tsp fresh rosemary or thyme
  • Zest and juice of 1 orange
  • 1/4 tsp cinnamon
  • Pinch of sea salt
  • 3 tbsp olive oil
  • Honey or hot honey for drizzling

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking pan with parchment paper.
  2. Make a small slit in each date and remove the pit, if not already pitted.
  3. Stuff each date with about 1 tsp of goat cheese.
  4. In a small bowl, combine walnuts, rosemary (or thyme), orange zest, orange juice, cinnamon, sea salt, and olive oil.
  5. Spoon a bit of the walnut mixture over each stuffed date.
  6. Roast for 15 minutes until dates are warm and slightly caramelized, and nuts are toasted.
  7. Let cool for 5 minutes, then drizzle with honey or hot honey before serving.
