- 1 teaspoon Lemon Zest (fresh is best)
- 2 tablespoons Fresh Lemon Juice (fresh juice is ideal)
- 1 pound Medium Shrimp (peeled and deveined)
- 2 tablespoons Extra-Virgin Olive Oil (or melted butter)
- 1 teaspoon Kosher Salt (sea salt works as alternative)
- 1/2 teaspoon Freshly Ground Black Pepper (omit for milder taste)
- 1/4 cup Chopped Fresh Parsley (for garnish, optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine shrimp with olive oil, salt, and pepper. Toss until evenly coated.
- Spread the shrimp on a baking sheet in a single layer and roast for about 6 minutes, until opaque and pink.
- In a mixing bowl, whisk together mayonnaise, horseradish, lemon juice, and lemon zest.
- Cover the aioli and refrigerate for at least 30 minutes.
- Serve the shrimp warm or chilled with the aioli and garnish with parsley.
