- 1 lb (medium-sized) Fresh Carrots
- 3 tbsp (pure honey) Honey
- 2 tbsp (fresh thyme, chopped) Herbs
- 2 tbsp (fresh parsley, chopped) Herbs
- 4 tbsp (unsalted) Butter
- 2 tbsp Olive Oil
- 1 tsp Salt
- 1/2 tsp Pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and peel the carrots, then cut them into uniform pieces about two inches long.
- In a large bowl, toss the carrot pieces with olive oil, salt, and pepper until well-coated.
- Spread the seasoned carrots onto a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes or until tender and caramelized, flipping halfway through.
- While the carrots roast, melt butter in a small saucepan over low heat. Stir in honey and finely chopped thyme and parsley until combined.
- Once the carrots are roasted, remove them from the oven and drizzle with honey herb butter while still warm. Toss gently to coat before serving.
