  • 2 tbsp Olive Oil
  • 1 tsp Salt
  • 1/2 tsp Pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the carrots, then cut them into uniform pieces about two inches long.
  3. In a large bowl, toss the carrot pieces with olive oil, salt, and pepper until well-coated.
  4. Spread the seasoned carrots onto a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes or until tender and caramelized, flipping halfway through.
