Description
Roasted Broccoli with Almonds, Lemon & Pecorino is a vibrant, flavor-packed side dish. Broccoli florets are roasted until crispy-edged and tender, then tossed with toasted almonds, fresh lemon zest and juice, and sharp pecorino cheese.

- 1.5 pounds broccoli (about 2 medium heads, cut into florets with stems peeled and sliced)
- 3 tablespoons extra virgin olive oil (divided)
- 1 teaspoon kosher salt (plus more to taste)
- 1/2 teaspoon black pepper (freshly ground)
- 1/4 teaspoon red pepper flakes (optional, for heat)
- 1/2 cup raw almonds (roughly chopped)
- 1 large lemon (for zest and juice)
- 2 ounces pecorino romano cheese (for shaving)
Instructions
- Preheat your oven to 425°F (220°C) with a rack in the center position. Prepare the broccoli by cutting florets into uniform pieces and slicing the stems into ¼-inch thick coins.
- On a large baking sheet, toss the broccoli with 2 tablespoons of olive oil, kosher salt, black pepper, and red pepper flakes. Spread in a single layer.
- Roast the broccoli for 15 minutes. Toss the chopped almonds with the remaining 1 tablespoon of olive oil. After 15 minutes, add the almonds to the broccoli and roast for another 5-7 minutes.
- While roasting, zest the lemon and prepare to juice it. Shave the pecorino cheese into thin ribbons.
- Transfer the hot roasted broccoli and almonds to a serving bowl. Add lemon zest and a squeeze of lemon juice. Toss to combine and add pecorino shavings. Taste and adjust seasoning as needed. Serve warm.
Notes
- Use two baking sheets if necessary to avoid crowding the broccoli.
- Shaving the cheese provides better texture than grating.
- Adjust lemon juice and seasoning to your preference.
