- 3 medium beets, roasted and peeled
- 8 ounces goat cheese, softened
- 2 tablespoons fresh thyme leaves
- 2 tablespoons honey
- 1 teaspoon lemon zest
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 400°F. Wrap the beets in foil and roast for 45-60 minutes, until tender. Allow to cool, then peel and chop the beets.
- In a medium bowl, combine the chopped beets, goat cheese, thyme, honey, lemon zest, salt, and pepper. Mix well until fully incorporated.
- Shape the mixture into a log or round on a piece of parchment paper or plastic wrap. Wrap and refrigerate for at least 2 hours, or until firm.
- Unwrap the chilled beet and goat cheese log and place on a serving platter. Garnish with extra thyme sprigs, if desired.
- Serve with crackers, crostini, or your favorite dippers.
