Ingredients

  • 4 large bell peppers (any color): The base for stuffing.
  • 1 cup ricotta cheese: For creaminess.
  • 1 cup cooked quinoa (or rice): For heartiness.
  • 1/2 cup grated Parmesan cheese: For flavor.
  • 1/2 cup chopped fresh spinach: For added nutrition.
  • 1/4 cup fresh basil (chopped): For flavor.
  • 1 teaspoon garlic powder: For seasoning.
  • Salt and pepper: To taste.
  • 1 tablespoon olive oil: For drizzling.
  • 1 can (14.5 oz) diced tomatoes (with juices): For the sauce.
  • 1 teaspoon dried oregano: For flavor.
  • Salt and pepper: To taste.

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
  3. In a large mixing bowl, combine the ricotta cheese, cooked quinoa, grated Parmesan cheese, chopped spinach, fresh basil, garlic powder, salt, and pepper. Mix until well combined.
  4. Generously fill each bell pepper with the ricotta mixture, pressing down gently to pack the filling.
  5. In a small saucepan, combine the diced tomatoes, dried oregano, salt, and pepper. Heat over medium heat until warmed through.
  6. Pour the tomato sauce (if using) into the bottom of the baking dish around the stuffed peppers.
  7. Drizzle the tops of the stuffed peppers with olive oil.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the filling is heated through.
  10. Remove from the oven and let cool slightly. Serve warm, garnished with additional fresh basil if desired.
